Ingredients

  • 1clove garlic
  • 2pcs small sweet potato
  • 300g lean beef mince
  • 10g Italian seasoning
  • 40g panko breadcrumbs
  • 50g tomato paste
  • 410g tomato puree
  • 50g baby spinach leaves
  • 1pcs egg
  • 15ml plain flour
  • 1pcs olive oil spray
  • 5ml olive oil
  • 5ml sugar

Method

  1. Step 1 — Prep ingredients
    Preheat the air fryer to 200C (see Don't have an air fryer?). Thinly slice the garlic. Peel the sweet potatoes and cut into 2cm chunks. Put the beef mince, 3 tsp Italian seasoning and 1 tsp breadcrumbs in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into walnut-sized balls.
  2. Step 2 — Air-fry meatballs
    Whisk 1 egg in a bowl. Put 1 tbs plain flour in a shallow bowl. Put the remaining breadcrumbs in a separate shallow bowl. Dust the meatballs with the flour, shake off the excess, then dip in the egg and coat in the breadcrumbs. Spray the meatballs with olive oil and put in the air-fryer basket. Air-fry the meatballs for 13 mins or until golden and cooked through.
  3. Step 3 — Make mash
    Meanwhile, put the sweet potato in a medium saucepan, cover with cold salted water and bring to the boil. Reduce the heat to medium and cook for 8-10 mins until tender. Drain, then return to the pan. Mash the sweet potato until smooth. Season with salt and pepper and stir to combine.
  4. Step 4 — Make tomato sauce
    While the sweet potato is cooking, heat 1 tsp olive oil in a small saucepan over medium heat. Cook the garlic for 1-2 mins until browned. Add the tomato paste, half the tomato puree*, remaining Italian seasoning and 1 tsp sugar and cook, stirring, for 2 mins or until combined and warmed through. Remove the pan from the heat. Season with salt and pepper.
  5. Step 5 — Serve up
    Divide the meatballs, sweet potato mash and spinach among plates. Serve with the tomato sauce and enjoy!
  6. Step 6 — Don't have an air fryer?
    No worries, you can cook the meatballs in a frypan. Heat 1 tbs olive oil in a medium frypan over medium-high heat. Cook the meatballs, turning, for 8-9 mins until browned and cooked through.
