Preheat the air fryer to 200C (see Don't have an air fryer?). Thinly slice the garlic. Peel the sweet potatoes and cut into 2cm chunks. Put the plant-based mince, 3 tsp Italian seasoning and 1 tsp breadcrumbs in a large bowl and season with salt and pepper. Using damp hands, combine well, then shape into walnut-sized balls.
Step 2 — Air-fry meatballs
Whisk 1 egg in a bowl. Put 1 tbs plain flour in a shallow bowl. Put the remaining breadcrumbs in a separate shallow bowl. Dust the plant-based meatballs with the flour, shake off the excess, then dip in the egg and coat in the breadcrumbs. Spray the meatballs with olive oil and put in the air-fryer basket. Air-fry the meatballs for 13 mins or until golden and cooked through.
Step 3 — Make mash
Meanwhile, put the sweet potato in a medium saucepan, cover with cold salted water and bring to the boil. Reduce the heat to medium and cook for 8-10 mins until tender. Drain, then return to the pan. Mash the sweet potato until smooth. Season with salt and pepper and stir to combine.
Step 4 — Make tomato sauce
While the sweet potato is cooking, heat 1 tsp olive oil in a small saucepan over medium heat. Cook the garlic for 1-2 mins until browned. Add the tomato paste, half the tomato puree*, remaining Italian seasoning and 1 tsp sugar and cook, stirring, for 2 mins or until combined and warmed through. Remove the pan from the heat. Season with salt and pepper.
Step 5 — Serve up
Divide the plant-based meatballs, sweet potato mash and spinach among plates. Serve with the tomato sauce and enjoy!
Step 6 — Don't have an air fryer?
No worries, you can cook the plant-based meatballs in a frypan. Heat 1 tbs olive oil in a medium frypan over medium-high heat. Cook the meatballs, turning, for 8-9 mins until browned and cooked through.
