Ingredients

  • 150g jasmine rice
  • 2clov garlic
  • 1pcs carrot
  • 1pcs pak choy
  • 60g satay sauce
  • 40g panko breadcrumbs
  • 300g chicken thigh fillets
  • 15ml plain flour
  • 1pcs vegetable oil spray
  • 5ml vegetable oil
  • 30ml mayonnaise
  • 5ml soy sauce

Method

  1. Step 1 — Cook rice
    Preheat the air fryer to 200C (see Don't have an air fryer?). Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
  2. Step 2 — Prep ingredients
    Meanwhile, crush or finely chop the garlic. Thinly slice the carrot on an angle. Coarsely chop the pak choy stems, leaving the leaves whole. Combine the garlic, satay sauce and 2 tsp hot water in a bowl. Put the breadcrumbs in a shallow bowl. Combine 1 tbs plain flour and a pinch of salt in a separate shallow bowl.
  3. Step 3 — Air-fry chicken
    Dust the chicken with the flour, shake off the excess, then dip in the satay sauce mixture and coat in the breadcrumbs. Generously spray both sides of the chicken with vegetable oil. Put the crumbed chicken in the air-fryer basket and air-fry, turning halfway, for 12-15 mins until golden and cooked through. Remove from the air fryer and rest for 2 mins.
  4. Step 4 — Cook veggies
    While the chicken is air-frying, heat 1 tsp vegetable oil in a small frypan over high heat. Cook the carrot, stirring occasionally, for 3-4 mins until almost tender and slightly charred. Add the pak choy stems and cook for a further 1-2 mins until tender. Add the pak choy leaves and cook, stirring, for 1 min or until slightly wilted. Season with salt and pepper.
  5. Step 5 — Serve up
    Combine 2 tbs mayonnaise and 1 tsp soy sauce in a bowl. Slice the crumbed chicken. Divide the rice, chicken and veggies among bowls. Drizzle with the soy sauce mayo and enjoy!
  6. Step 6 — Don't have an air fryer?
    No worries, you can cook the chicken in a frypan. Heat 2 tbs vegetable oil in a medium frypan over medium heat. Cook the crumbed chicken for 2-3 mins each side until golden and cooked through. It might not be as crunchy but it will be just as delicious!
