Ingredients
2pcs potato
150g green beans
1pcs tomato
1pcs onion
1clove garlic
50g tomato paste
20ml worcestershire sauce
250ml cream
2pcs beef rump steaks
1bunch chives
38ml olive oil
5ml dijon mustard
Method
Step 1 — Bake chips
Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Cut the unpeeled potatoes into 1.5cm-thick chips. Put the chips on a lined tray, drizzle with 1 tbs olive oil and season with salt and pepper. Bake for 30 mins or until golden and tender.
Step 2 — Prep ingredients
While the chips are baking, trim the beans. Quarter the tomato. Very finely chop the onion. Crush or finely chop the garlic.
Step 3 — Bake beans and tomato
Put the beans and tomato on the remaining lined tray, drizzle with 2 tsp olive oil and season with salt and pepper. Bake for 12-15 mins until tender and slightly charred.
Step 4 — Make Diane sauce
Meanwhile, heat 2 tsp olive oil in a medium frypan over medium heat. Cook the onion, stirring, for 5 mins or until softened. Add the garlic and stir for 1 min or until fragrant. Add the tomato paste, half the worcestershire sauce*, half the cream* and 1 tsp dijon mustard and cook, stirring, for 2-3 mins until slightly thickened. Remove the pan from the heat.
Step 5 — Cook steaks
While the sauce is cooking, heat a medium frypan over high heat until hot (see cooking tip). Drizzle the steaks with 2 tsp olive oil and season with salt and pepper. Reduce the heat to medium-high. Cook the steaks for 2-3 mins each side for medium-rare, or until cooked to your liking. Remove and rest for 3 mins.
Step 6 — Get ready to serve
Finely chop the chives. Taste the Diane sauce, then season with salt and pepper. Divide the steaks, chips, beans and tomato among plates. Drizzle the steaks with the Diane sauce and scatter over the chives to serve.
