Ingredients

  • 400g chat potatoes
  • 1pcs baby broccoli
  • 1pcs lemon
  • 1clove garlic
  • 2pcs beef rump steaks
  • 10g umami seasoning
  • 40ml truffle mayonnaise
  • 30g butter
  • 10ml olive oil

Method

  1. Step 1 — Bake potato
    Preheat the oven to 200C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 1cm-thick rounds. Put the potato on the lined tray, dot with 10g chopped butter and season with salt and pepper. Bake for 15 mins.
  2. Step 2 — Make lemon-garlic butter
    While the potato is baking, trim the baby broccoli and halve any thicker stems lengthwise. Finely grate ¼ tsp lemon zest, then cut the lemon into wedges. Crush or finely chop the garlic. Put the lemon zest, garlic and 20g butter in a bowl, season with salt and pepper, then mash with a fork until well combined.
  3. Step 3 — Bake baby broccoli
    After the potato has been baking for 15 mins, add the baby broccoli to the tray, then smear with the lemon-garlic butter. Bake for a further 10 mins or until the potato and baby broccoli are tender. Using tongs, gently toss to coat the vegetables in the lemon-garlic butter.
  4. Step 4 — Cook steaks
    Meanwhile, drizzle the steaks with 2 tsp olive oil and season with salt. Heat a medium frypan over high heat until hot (see Kitchen 101). Reduce the heat to medium-high and cook the steaks for 2-3 mins each side. Add half the umami seasoning* and 1 tbs water and cook, turning, for 20 secs or until steaks are coated and cooked to your liking. Remove from pan and rest for 3 mins.
  5. Step 5 — Serve up
    Divide the steaks and baked potato and baby broccoli among plates. Drizzle the steaks with any resting juices and the vegetables with any tray juices. Serve with the lemon wedges and truffle mayonnaise. Enjoy!
  6. Step 6 — Kitchen 101
    It's important to have the pan very hot before adding the beef, otherwise it may stew slightly and become tough. To ensure tender beef, slice the steak against the grain.
