Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled potatoes into 1cm-thick fries. Spread the fries on the lined tray. Drizzle with 2 tsp olive oil and season with salt and pepper. Roast for 25-30 mins until golden.
Step 2 — Start bacon jam
Meanwhile, heat 1 tsp olive oil in a small frypan over medium-high heat. Cook the bacon, stirring occasionally, for 4-5 mins until crisp. Remove using a slotted spoon, leaving the flavoured oil in the pan. Finely chop the onion and thyme leaves, discarding the tough stems.
Step 3 — Finish bacon jam
Return the pan to medium heat. Cook the onion, covered, stirring occasionally, for 10-12 mins until softened. Add the thyme, 2 tsp sugar and 1 tsp balsamic vinegar and cook for a further 5-6 mins until caramelised. Stir in the bacon and 1 tbs water and cook, stirring, for 1 min or until thickened and sticky.
Step 4 — Cook patties
While the onion is cooking, put the beef mince and barbecue seasoning in a large bowl and season with pepper. Using damp hands, combine well, then shape into 2 equal patties, slightly larger than the base of a bun. Heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the beef patties for 3 mins each side or until cooked through.
Step 5 — Toast buns and prep salad
Halve the buns through the middle, then put, cut-side up, on a large oven tray. Bake for 5-6 mins until lightly toasted. Coarsely chop the tomato. Trim the lettuce, then coarsely shred. Combine 2 tsp extra virgin olive oil and 1 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the tomato and half the lettuce to the dressing and toss to coat.
Step 6 — Get ready to serve
Coarsely grate the cheese. Scatter the cheese over the fries, then roast for a further 3-5 mins until melted. Spread the cut side of the buns with the aioli. Fill with the beef patties, bacon jam and remaining lettuce. Serve the burgers with the cheesy fries and salad.
