Bring a large saucepan of salted water to the boil for the pasta. Bring a small saucepan of water to the boil for the beans. Wipe the mushrooms clean, then halve, quartering any large ones. Heat 1 tbs olive oil in a medium deep frypan over high heat. Cook the mushrooms, stirring occasionally, for 4-5 mins until golden.
Step 2 — Prep ingredients
While the mushrooms are browning, trim the beans. Thinly slice the garlic. Coarsely grate the cheddar and finely grate the parmesan.
Step 3 — Cook beans
Cook the beans in the small pan of boiling water for 2-3 mins until just tender. Drain. Return the beans to the pan, add 2 tsp extra virgin olive oil, season with salt and pepper and toss to coat. Cover to keep warm.
Step 4 — Make sauce
Add 30g butter to the mushrooms and cook, stirring, over medium heat until melted. Add the garlic, Tuscan seasoning and half the umami seasoning* and cook, stirring, for 1 min or until fragrant. Add half the cream* and cook, stirring, for 1 min or until heated through.
Step 5 — Cook pasta
Meanwhile, add the pasta to the pan of boiling water and cook, stirring to separate the strands, for 3-4 mins until al dente. Reserve 160ml (⅔ cup) cooking water, then drain.
Step 6 — Get ready to serve
Add the pasta, spinach, three-quarters of the cheeses and ¾ tsp balsamic vinegar to the sauce and stir until the spinach is wilted. Gradually add the reserved cooking water, stirring constantly, until the sauce coats the pasta and looks slightly glossy. Divide the pasta among bowls. Scatter over the remaining cheeses and serve with the beans.
