Preheat the grill to high. Line an oven tray with foil. Crush or finely chop 1 garlic clove. Thinly slice the spring onion. Coarsely grate the carrot (see Did you know?). Coarsely grate the cheese.
Step 2 — Fry pork and carrot
Heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the pork mince and carrot, breaking up the lumps with a spoon, for 3-4 mins until the mince is browned.
Step 3 — Add seasoning
Add the Tex-Mex seasoning, garlic and half the tomato paste* to the pork mixture and cook, stirring, for 30 secs or until fragrant. Add 60ml (¼ cup) water and cook, stirring, for 1 min or until slightly reduced. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 4 — Grill nachos
Spread the corn chips on the lined tray. Layer with the pork mixture and scatter with the cheese. Grill the nachos for 2-3 mins until the cheese is melted and the chips are golden.
Step 5 — Serve up
Scatter the spring onion over the cheesy pork nachos and pop the tray on the table for everybody to help themselves. Enjoy!
