Ingredients

  • 1pcs red onion
  • 1bunch parsley
  • 1clove garlic
  • 1pcs potato
  • 1pcs small sweet potato
  • 5g South American seasoning
  • 2pcs chicken breast fillet
  • 20g butter
  • 23ml olive oil
  • 15ml red or white wine vinegar
  • 3ml sugar
  • 3ml dijon mustard

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Thinly slice the onion with a sharp knife or mandoline. Pick the parsley leaves and finely chop half the stems, discarding the remaining stems. Crush ½ garlic clove* (see Kitchen 101). Put 20g butter in a bowl to soften.
  2. Step 2 — Roast chips
    Cut the unpeeled potato and unpeeled sweet potato into 1.5cm-thick chips, then put on the lined tray. Drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Roast, turning once, for 25 mins or until golden and tender.
  3. Step 3 — Pickle onion
    Meanwhile, put 1 tbs red wine vinegar, 2 tsp olive oil and ½ tsp sugar in a large bowl, season with salt and pepper and stir to combine. Add the onion, toss to combine and set aside to pickle.
  4. Step 4 — Make spiced butter
    Add the parsley stems, garlic, half the South American seasoning* and ½ tsp dijon mustard to the softened butter, season with salt and pepper and stir to combine. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Season well with salt and pepper.
  5. Step 5 — Cook chicken and serve
    Heat 2 tsp olive oil in a large frypan over medium-high heat. Cook the chicken for 2-4 mins each side until browned and cooked through. Remove the pan from the heat. Add the parsley leaves to the pickled onion mixture and toss to combine. Divide the chicken, chips and parsley salad among plates. Top the chicken with the spiced butter and enjoy!

    Garlic used raw is best crushed in a garlic crusher or finely minced with a knife – adding a little salt to the garlic on the chopping board helps break it down.
