Preheat the oven to 220C, fan-forced. Grease a 1.5L (6 cup) baking dish. Coarsely chop the capsicum and onion. Pick the parsley leaves and finely chop the stems.
Step 2 — Prep beans
Drain and rinse the beans.
Step 3 — Assemble stew
Put the capsicum, onion, parsley stems, beans, tomatoes, Spanish seasoning, country seasoning and 1 tsp sugar in the baking dish. Season with pepper, then stir to combine.
Step 4 — Bake stew
Add the sausages to the tomato mixture. Bake the stew for 30 mins or until the sausages are cooked through, the vegetables are tender and the sauce is slightly reduced.
Step 5 — Bake bread
Meanwhile, coarsely tear the bread rolls into chunks. Put on an oven tray and bake for 4-5 mins until golden and crunchy.
Step 6 — Get ready to serve
Scatter the parsley leaves over the stew. Take the stew to the table and serve with the crusty bread for dipping.
