Ingredients

  • 1pcs onion
  • 1pcs capsicum
  • 1pcs zucchini
  • 400g cannellini beans
  • 10g Spanish seasoning
  • 400g can cherry tomatoes
  • 25g parmesan
  • 200g pulled pork
  • 30g pitted kalamata olives
  • 15ml olive oil
  • 3ml white vinegar
  • 3ml sugar

Method

  1. Step 1 — Prep ingredients
    Thinly slice the onion. Coarsely chop the capsicum. Quarter the zucchini lengthwise and thinly slice. Drain and rinse the beans.
  2. Step 2 — Start stew
    Heat 1 tbs olive oil in a medium deep frypan over medium-high heat. Cook the onion, capsicum and zucchini, stirring regularly, for 5 mins or until softened. Add the Spanish seasoning and cook, stirring occasionally, for a further 1-2 mins until fragrant.
  3. Step 3 — Simmer stew
    Add the tomatoes, 2 tbs water and ½ tsp white vinegar to the vegetables and bring to the boil. Reduce the heat to medium, cover and cook for 6-8 mins until slightly reduced.
  4. Step 4 — Grate parmesan
    While the stew is cooking, finely grate the parmesan.
  5. Step 5 — Finish stew
    Add the pulled pork and beans to the stew. Cook, stirring regularly, for 2 mins or until heated through.
  6. Step 6 — Get ready to serve
    Gently stir the olives and ½ tsp sugar into the stew until combined. Taste, then season with salt and pepper. Divide the stew among bowls. Scatter with the parmesan to serve.
