Ingredients

  • 2pcs potato
  • 1pcs onion
  • 1pcs capsicum
  • 1bunch parsley
  • 50g cheddar
  • 10g smoky barbecue seasoning
  • 2pcs beef rump steaks
  • 50g smoky barbecue sauce
  • 23ml olive oil
  • 30ml mayonnaise

Method

  1. Step 1 — Roast fries
    Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled potatoes into 1cm-thick fries. Put the fries on the lined tray, drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Roast for 22-24 mins until golden and tender.
  2. Step 2 — Prep ingredients
    While the fries are roasting, thinly slice the onion and capsicum. Pick the parsley leaves, discarding the stems. Coarsely grate the cheese. Combine 2 tbs mayonnaise and 1 tsp water in a bowl and season with salt and pepper.
  3. Step 3 — Cook steaks
    Combine the barbecue seasoning and 1 tbs olive oil in a large bowl and season with salt and pepper. Add the steaks and turn to coat. Heat a medium frypan over high heat until hot (see Kitchen 101). Reduce the heat to medium-high and cook the steaks, turning regularly, for 4-6 mins for medium-rare, or until cooked to your liking. Remove from the pan and rest for 3 mins.
  4. Step 4 — Cook veggies
    Heat the same pan over medium-high heat. Cook the onion, stirring, for 1-2 mins. Add the capsicum and cook, stirring, for a further 2-3 mins until the onion is softened and the capsicum is tender. Remove the pan from the heat. Season with salt and pepper. Meanwhile, scatter the cheese over the fries and bake for 3 mins or until the cheese is melted.
  5. Step 5 — Serve up
    Thinly slice the steak. Layer the steak, onion and capsicum on top of the cheesy fries. Drizzle over the mayo mixture and barbecue sauce and scatter with the parsley. Divide the loaded fries among plates or put the tray on the table for everyone to help themselves. Enjoy!
  6. Step 6 — Kitchen 101
    It's important to have your pan very hot before adding the beef, otherwise it may stew slightly and become tough. To ensure tender beef, slice the steak against the grain.
