Preheat the oven to 200C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 2cm-thick chips. Put on the lined tray, drizzle with 2 tsp vegetable oil, season with salt and pepper and toss to combine. Bake for 25-30 mins until golden and tender.
Step 2 — Prep ingredients
Meanwhile, peel the cucumber into ribbons. Shred the cabbage with a sharp knife or mandoline. Trim the stems from the snow peas, removing the strings from one side. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Combine 2 tsp white vinegar, ½ tsp sugar and a pinch of salt in a large bowl. Add the cucumber and toss to combine.
Step 3 — Cook chicken
Combine oyster sauce, worcestershire sauce and 2 tsp tomato sauce in a large bowl. Add chicken and turn to coat. Heat 1 tbs vegetable oil in a medium frypan over medium-high heat. Add chicken, reserving marinade, and cook, turning regularly, for 4-8 mins until cooked through. Reduce heat to medium, add reserved marinade and cook, turning, for 1 min. Remove from pan.
Step 4 — Toast buns
Bring a small saucepan of water to the boil for the snow peas (see Make it yours). Cut the buns in half and put, cut-side up, on an oven tray. Bake for 6 mins or until toasted. While the buns are toasting, drain the cucumber, reserving the pickling liquid. Combine 2 tsp vegetable oil and 2 tsp reserved pickling liquid in a large bowl. Season with salt and pepper.
Step 5 — Serve up
Cook the snow peas in the pan of boiling water for 3 mins or until tender. Drain and rinse under cold water to cool. Add snow peas and cabbage to dressing and toss to combine. Spread bun bases and tops with the mayonnaise. Layer bases with slaw, chicken and pickled cucumber, then sandwich with tops. Serve with chips and any remaining slaw and cucumber. Enjoy!

Prefer raw snow peas? Thinly slice the snow peas lengthwise and toss through the slaw instead of cooking them.
