Ingredients

  • 2clov garlic
  • 1pcs onion
  • 200g mushrooms
  • 50g parmesan
  • 250ml cream
  • 10g umami seasoning
  • 40g panko breadcrumbs
  • 300g fresh fettuccine pasta
  • 50g baby spinach leaves
  • 20ml worcestershire sauce
  • 15ml olive oil

Method

  1. Step 1 — Prep ingredients
    Crush or finely chop the garlic. Thinly slice the onion. Wipe the mushrooms clean, then thinly slice. Finely grate the parmesan.
  2. Step 2 — Make sauce
    Heat 2 tsp olive oil in a medium deep frypan over medium-high heat. Cook the onion, stirring, for 5 mins or until soft. Increase the heat to high. Add the mushrooms and cook, stirring, for 5-6 mins until softened. Stir in the cream and three-quarters of the umami seasoning and bring to a simmer. Reduce the heat to medium-low and cook for 4-5 mins until thickened.
  3. Step 3 — Make pangrattato
    Meanwhile, bring a large saucepan of salted water to the boil for the pasta. Heat 2 tsp olive oil in a small frypan over medium-high heat. Cook the garlic, stirring, for 30 secs or until fragrant. Add the remaining umami seasoning and half the breadcrumbs* and cook, stirring, for 2-3 mins until golden. Remove from the pan. Taste, then season with salt and pepper.
  4. Step 4 — Cook pasta
    While the sauce is simmering, add the pasta to the pan of boiling water and cook, stirring to separate the strands, for 3-4 mins until al dente. Reserve 125ml (½ cup) cooking water, then drain.
  5. Step 5 — Serve up
    Add the pasta, spinach, half the parmesan, 1 tsp worcestershire sauce* and the reserved cooking water to the sauce, stirring constantly until the sauce coats the pasta. Remove the pan from the heat. Taste, then season with salt and pepper. Divide the fettuccine alfredo among bowls and scatter over the pangrattato and remaining parmesan. Enjoy!
