Preheat the oven to 200C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled potatoes into 5mm-thick matchsticks (see Kitchen hack). Put the potato in a single layer on the lined tray, drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Bake on the upper oven shelf for 30 mins or until golden and tender.
Step 2 — Prep ingredients
Meanwhile, wipe the mushrooms clean, then thinly slice. Crush or finely chop the garlic. Cut the rolls in half, but not all the way through. To make the dressing, combine 2 tsp olive oil and 1 tsp balsamic vinegar in a large bowl and season with salt and pepper.
Step 3 — Cook sausages
Heat 2 tsp olive oil in a medium frypan over medium-high heat. Cook the sausages, turning regularly, for 8 mins or until browned and cooked through. Drizzle with 1 tsp honey and cook, turning, for 10 secs or until coated. Remove from the pan and cover to keep warm. Put the rolls on an oven tray, cut-side up, and bake on the lower shelf for 6-7 mins until lightly toasted.
Step 4 — Cook mushrooms
While the rolls are baking, heat 1 tsp olive oil in the same pan over high heat. Cook the mushrooms, stirring occasionally, for 5 mins or until browned. Add the garlic and cook, stirring, for 1 min or until browned. Add 2 tsp water and cook, stirring, for 30 secs or until slightly reduced. Remove from the heat. Season with salt and pepper.
Step 5 — Serve up
Add the rocket to the dressing and toss to combine. Fill the rolls with the sausages, mushrooms and some rocket, then drizzle with the truffle mayonnaise. Serve with the fries and remaining rocket and enjoy!
