Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled potatoes into 1.5cm thick fries. Put on the lined tray, drizzle with 2 tsp olive oil and toss to coat. Bake for 12 mins. Scatter with half the pepper and garlic seasoning and toss to coat. Bake for a further 13 mins or until the fries are golden and tender.
Step 2 — Make pickles and slaw
Meanwhile, thinly slice the cucumber. Combine 2 tsp white wine vinegar and ½ tsp sugar in a bowl and season with salt and pepper. Add the cucumber and toss to coat. Combine 2 tsp olive oil, 1 tsp white wine vinegar and ¼ tsp sugar in a large bowl and season with salt and pepper. Add the slaw mix and toss to coat.
Step 3 — Make Nashville hot sauce
Combine the sriracha, remaining pepper and garlic seasoning, 10g butter, 1 tsp sugar and 2 tbs water in a small saucepan and bring to the boil. Reduce the heat to medium and cook, swirling the pan occasionally, for 1 min or until slightly thickened. Remove from the heat.
Step 4 — Cook patties
Heat 1 tsp olive oil in a medium frypan over medium-high heat. Add the beef patties to the pan, season with salt and pepper, then cover and cook for 4 mins each side or until cooked through. Drain the oil from the pan. Add the Nashville hot sauce to the pan and cook, turning the patties, for 1 min or until coated. Remove from the heat.
Step 5 — Assemble burgers
While the patties are cooking, cut the buns in half. Put on an oven tray, cut-side up, and bake for 5 mins or until lightly toasted. Spread the buns with the burger sauce. Drain the pickled cucumber. Layer the bun bases with some of the slaw and cucumber and the patties, then drizzle with the pan juices.
Step 6 — Melt cheese and serve up
Put the cheese in a microwave-safe bowl and microwave for 20-30 secs until the cheese is melted (see Cooking tip). Pour the cheese over the burgers (do this straight away — it sets fast), then sandwich with the bun tops. Serve the burgers with the fries and remaining slaw and cucumber and enjoy!
