Preheat the oven to 200C, fan-forced. Finely chop the tomato. Coarsely grate the cheese. Combine the tomato, 1 tsp olive oil and ½ tsp red wine vinegar in a bowl and season with salt and pepper. Coarsely mash the avocado in a bowl, add ½ tsp red wine vinegar, season with salt and pepper and stir to combine. Line 1 oven tray with baking paper.
Step 2 — Cook patties
Heat 1 tsp olive oil in a medium frypan over medium-high heat. Add the beef patties, season with salt and pepper, then cover and cook for 4 mins each side or until cooked through. Drain the oil from the pan. Scatter half the Tex-Mex seasoning over the patties, then add 1 tbs water and cook, turning the patties, for 30 secs or until coated.
Step 3 — Bake buns
Meanwhile, cut the buns in half. Put on an oven tray, cut-side up, and bake on the lower oven shelf for 4 mins or until lightly toasted. Spread the corn chips on the lined tray, scatter with the cheese (see Make it yours) and bake on the upper shelf for 4 mins or until the cheese is melted.
Step 4 — Toss salad
Combine ½ tsp Tex-Mex seasoning* and 1 tbs mayonnaise in a bowl. Put the salad leaves and ranch dressing in a separate bowl and toss to coat.
Step 5 — Assemble burgers
Spread the buns with the Tex-Mex mayo. Layer the bases with the beef patties, salad and tomato, then sandwich with the bun tops. Spoon the guacamole and any remaining tomato over the corn chips. Divide the burgers, guac nachos and remaining salad among plates and enjoy!
Step 6 — Make it yours
Fancy a cheeseburger? Use half the cheese for the corn chips and scatter the remaining cheese over the patties when you assemble the burgers.
