Ingredients

  • 50ml teriyaki sauce
  • 40g kecap manis
  • 1pcs zucchini
  • 1bunch coriander
  • 1clove garlic
  • 300g free-range chicken breast fillet
  • 150g egg noodles
  • 200g stir-fry mix
  • 10g fried shallots
  • 5ml white vinegar
  • 15ml neutral-flavoured oil

Method

  1. Step 1 — Make sauce
    Bring a medium saucepan of water to the boil for the noodles. Combine the teriyaki sauce, 1 tsp kecap manis, 1 tbs water and 1 tsp white vinegar in a bowl.
  2. Step 2 — Prep ingredients
    Halve the zucchini lengthwise and thinly slice. Coarsely chop the coriander leaves, discarding the stems. Crush or finely chop the garlic. Thinly slice the chicken into strips. Put the garlic, chicken and remaining kecap manis in a bowl, season with pepper and stir to coat.
  3. Step 3 — Stir-fry chicken
    Heat 2 tsp oil in a large deep frypan over high heat. Using tongs, add the chicken to the pan, reserving any remaining marinade in the bowl. Stir-fry the chicken for 2-3 mins until golden and cooked through. Remove from the pan and reserve the pan.
  4. Step 4 — Cook noodles
    Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
  5. Step 5 — Cook vegetables
    Heat 2 tsp oil in the reserved pan over medium-high heat. Cook the zucchini, stirring, for 1 min or until starting to soften. Add the stir-fry mix, sauce and reserved marinade and bring to a simmer. Cook, stirring, for 1 min or until the vegetables are just tender.
  6. Step 6 — Get ready to serve
    Add the noodles, chicken and any resting juices to the vegetable mixture and stir to combine. Divide the chicken noodle stir-fry among bowls. Scatter over the coriander and fried shallots to serve.
