Bring a medium saucepan of water to the boil for the noodles. Combine the teriyaki sauce, 1 tsp kecap manis, 1 tbs water and 1 tsp white vinegar in a bowl.
Step 2 — Prep ingredients
PRAWNS OPTION Halve the zucchini lengthwise and thinly slice. Coarsely chop the coriander leaves, discarding the stems. Crush or finely chop the garlic. Put the garlic, prawns and remaining kecap manis in a bowl, season with pepper and stir to coat.
Step 3 — Cook noodles
Cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 4 — Stir-fry prawns
Meanwhile, heat 2 tsp oil in a large deep frypan over high heat. Using tongs, add the prawns to the pan, reserving any remaining marinade in the bowl. Stir-fry the prawns for 2-3 mins until just cooked through. Remove from the pan.
Step 5 — Cook vegetables
Heat 2 tsp oil in the same pan over medium-high heat. Cook the zucchini, stirring, for 1 min or until starting to soften. Add the stir-fry mix, sauce and reserved marinade and bring to a simmer. Cook, stirring, for 1 min or until the vegetables are just tender.
Step 6 — Get ready to serve
Add the noodles, prawns and any resting juices to the vegetable mixture and stir to combine. Divide the prawn noodle stir-fry among bowls. Scatter over the coriander and fried shallots to serve.
