Check your avocado is ripe before starting this recipe (see Cooking tip). Remove 20g butter from the fridge to soften. Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 2cm-thick fries.
Step 2 — Roast fries
Put the potato on the lined tray, drizzle with 3 tsp olive oil, season with salt and pepper and toss to coat. Roast for 25-30 mins until golden and tender.
Step 3 — Pan-fry steaks
Meanwhile, drizzle the steaks with 1 tsp olive oil, scatter with half the country seasoning and season with salt and pepper. Heat a medium frypan over high heat until hot (see Kitchen 101). Reduce the heat to medium-high and cook the steaks, turning regularly, for 4-6 mins for medium-rare, or until cooked to your liking. Remove from the pan and rest for 3 mins.
Step 4 — Make mustard butter
While the steaks are resting, put the softened butter, remaining country seasoning and 1½ tsp dijon mustard in a bowl and stir to combine.
Step 5 — Toss salad and serve up
Thinly slice the avocado. Put the avocado, spinach and maple and mustard dressing in a large bowl. Season with salt and pepper and toss to combine. Divide the steaks, fries and avo salad among plates. Top the steaks with the mustard butter and enjoy!

It's important to have the pan very hot before adding the beef, otherwise it may stew slightly and become tough.
