Ingredients

  • 1pcs tomato
  • 150g red cabbage
  • 1pcs carrot
  • 1bunch coriander
  • 10g Aussie barbecue seasoning
  • 300g beef stir-fry
  • 6pcs flour tortillas
  • 40ml burger sauce
  • 15ml extra virgin olive oil
  • 10ml red wine vinegar
  • 3ml honey
  • 3ml wholegrain mustard
  • 15ml olive oil

Method

  1. Step 1 — Prep ingredients
    Coarsely chop the tomato. Finely shred the cabbage. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Coarsely chop the coriander leaves, discarding the stems.
  2. Step 2 — Make dressing
    Put 1 tbs extra virgin olive oil, 2 tsp red wine vinegar, ½ tsp honey and ½ tsp wholegrain mustard in a large bowl. Season with salt and pepper and whisk to combine.
  3. Step 3 — Season beef
    Combine the Aussie barbecue seasoning and a drizzle of olive oil in a large bowl and season with salt and pepper. Separate the beef stir-fry, add to the oil mixture and toss to coat.
  4. Step 4 — Cook beef
    Heat a drizzle of olive oil in a large frypan over high heat until very hot (beef stir-fry is best with hot, fast cooking; get the pan very hot before adding the beef and stick to the short cooking time). Stir-fry the beef for 1-2 mins until browned. Remove from the pan.
  5. Step 5 — Warm tortillas
    Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through.
  6. Step 6 — Get ready to serve
    Whisk the dressing to combine. Add the cabbage and carrot and toss to coat. Taste, then season with salt and pepper. Divide the tortillas among plates and fill with the coleslaw, tomato, coriander, beef and any resting juices. Drizzle with the burger sauce to serve.
