Drain and rinse the corn. Pick the coriander leaves and finely chop the stems.
Step 2 — Cook beef mince
Heat a small drizzle of olive oil in a medium frypan over medium-high heat. Add the beef mince, coriander stems and Tex-Mex seasoning and cook, breaking up the lumps with a spoon, for 3-4 mins until browned. Stir in ½ tsp red wine vinegar. Taste, then season with salt and pepper.
Step 3 — Make dressing
Meanwhile, put 2 tsp red wine vinegar and 1 tbs extra virgin olive oil in a large bowl. Season with salt and pepper and whisk to combine.
Step 4 — Warm tortillas
Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through.
Step 5 — Dress slaw
Add the slaw mix, corn and coriander leaves to the dressing and toss to combine.
Step 6 — Get ready to serve
Divide the mince, slaw and aioli among the tortillas. Scatter with a pinch of chilli flakes*, if desired. Serve with the remaining slaw on the side.
