Ingredients

  • 1pcs ginger
  • 200g Chinese cabbage
  • 1pcs Lebanese cucumber
  • 1pcs carrot
  • 20ml rice wine vinegar
  • 50g sweet chilli sauce
  • 10ml sesame oil
  • 300g honey soy chicken dumplings
  • 20g roasted peanuts
  • 10ml soy sauce
  • 1pcs neutral-flavoured oil

Method

  1. Step 1 — Prep ingredients
    Peel and finely grate the half the ginger*. Thinly slice the cabbage with a sharp knife or mandoline. Peel the cucumber and carrot into ribbons using a vegetable peeler.
  2. Step 2 — Make dressing
    Put the ginger, 2 tsp rice wine vinegar*, 2 tsp sweet chilli sauce*, 1 tsp sesame oil*, 2 tsp soy sauce and 1 tsp oil in a bowl and whisk to combine.
  3. Step 3 — Fry dumplings
    Heat a generous drizzle of oil in a medium frypan over medium-high heat. Cook the dumplings, without turning, for 2-3 mins until golden on one side.
  4. Step 4 — Steam dumplings
    Carefully add 60ml (¼ cup) water (take extra care adding water to the hot pan as the oil can spit and the steam created is very hot). Cover and steam for 3 mins or until the dumplings are tender.
  5. Step 5 — Toss slaw
    Meanwhile, put the cabbage, cucumber and carrot in a large bowl. Add half the dressing, season with pepper and toss to combine.
  6. Step 6 — Get ready to serve
    Coarsely chop the peanuts. Divide the slaw and dumplings among bowls. Drizzle with the remaining dressing and scatter with the peanuts to serve.
