Check your avocado is ripe before starting this recipe (see cooking tip). Crush or finely chop the garlic. Coarsely grate the carrot. Coarsely chop the tomato and avocado.
Step 2 — Brown beef mince
Meanwhile, heat a drizzle of olive oil in a large frypan over high heat. Cook the beef mince, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 3 — Cook mince mixture
Reduce the heat to medium-high. Add the garlic, carrot and Tex-Mex seasoning to the mince and cook, stirring, for 2-3 mins until the carrot is softened. Add half the tomato paste* and cook, stirring, for 1 min. Remove from the heat. Add 1 tbs water, season with salt and pepper and stir to combine.
Step 4 — Make salsa
While the mince is cooking, combine the tomato, avocado, 3 tsp extra virgin olive oil and 2 tsp red wine vinegar in a bowl, season with salt and pepper and stir to combine.
Step 5 — Heat tortillas
Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until heated through.
Step 6 — Get ready to serve
Divide the mince mixture, cheese and half the salsa among the tortillas. Serve with the remaining salsa.
