Ingredients

  • 1pcs cos lettuce
  • 2pcs tomato
  • 20g roasted peanuts
  • 1pcs spring onion
  • 300g lean pork mince
  • 250g microwave jasmine rice
  • 10g fried shallots
  • 5g toasted sesame seeds
  • 80g Japanese dressing
  • 1pcs neutral-flavoured oil

Method

  1. Step 1 — Prep ingredients
    Trim the lettuce, then quarter lengthwise. Cut the tomatoes into wedges.
  2. Step 2 — Prep garnishes
    Coarsely chop the peanuts. Thinly slice the spring onion on an angle.
  3. Step 3 — Brown pork mince
    Heat a generous drizzle of oil in a medium deep frypan over high heat. Add the pork mince, season with salt and pepper and cook, breaking up the lumps with a spoon, for 3-4 mins until browned.
  4. Step 4 — Heat rice
    Meanwhile, massage the packet of rice to loosen and tear a 2cm opening for the steam to escape. Heat in the microwave for 90 secs or until heated through. Add the rice to the pork and stir to combine. Remove the pan from the heat.
  5. Step 5 — Flavour pork
    Combine the peanuts, fried shallots and sesame seeds in a bowl. Add half the peanut mixture and half the Japanese dressing to the pork mixture and stir to combine.
  6. Step 6 — Get ready to serve
    Divide the lettuce, tomato and pork mixture among bowls. Scatter with the spring onion and remaining peanut mixture. Drizzle with the remaining Japanese dressing to serve.
