Finely grate the zest of half the lime, then juice the lime. Combine the lime zest, lime juice, aioli, sesame oil, sesame seeds, 3 tsp soy sauce and ½ tsp sugar in a bowl.
Step 2 — Prep vegetables
Thinly slice the celery and spring onion on an angle.
Step 3 — Stir-fry vegetables
Heat a drizzle of oil in a medium frypan over high heat. Stir-fry the celery, spring onion and vegetable mix for 5 mins or until just tender. Season with salt and pepper.
Step 4 — Fry dumplings
Meanwhile, heat a generous drizzle of oil in a separate medium frypan over medium-high heat. Cook the dumplings, without turning, for 2-3 mins until golden on one side.
Step 5 — Steam dumplings
Carefully add 60ml (¼ cup) water to the dumplings (take extra care adding water to the hot pan as the oil can spit and the steam created is very hot). Cover and steam for 3 mins or until the dumplings are tender.
Step 6 — Get ready to serve
Divide the vegetables and dumplings among bowls. Drizzle with the dressing and scatter with a pinch of shichimi togarashi to serve. (Shichimi togarashi is spicy; you can add more or less to taste, or omit it if you prefer.)
