Bring a large saucepan of salted water to the boil for the gnocchi. Trim the pak choy and separate the leaves. Trim the stems from the snow peas, removing the strings from one side. Thinly slice the spring onions.
Step 2 — Prep sauce
Combine the chilli paste, 2 tsp soy sauce, 1 tsp sugar, 1 tsp white vinegar and 2 tbs water in a bowl.
Step 3 — Boil gnocchi
Add the gnocchi to the pan of boiling water (make sure the water is at a rapid boil). Stir to separate the gnocchi, then return to the boil and cook for 3 mins. Drain.
Step 4 — Stir-fry vegetables
Heat a drizzle of oil in a large frypan over high heat until hot. Add the pak choy and snow peas and stir-fry for 1-2 mins until just tender. Season with salt and pepper, then remove from the pan.
Step 5 — Add gnocchi and sauce
Heat a drizzle of oil in the same pan over medium-high heat. Cook half the spring onion for 1 min or until starting to soften. Add the gnocchi and sauce and cook, stirring, for 1 min or until the sauce is slightly reduced. Remove from the heat.
Step 6 — Get ready to serve
Scatter the cheese over the gnocchi. Divide the gnocchi and vegetables among bowls. Scatter over the sesame seeds and remaining spring onion to serve.
