Fill a medium saucepan three-quarters full with water and bring to the boil. Rinse the rice until the water runs clear. Add the rice to the pan of boiling water and cook for 10 mins. Add the peas and cook for a further 2 mins or until tender. Drain. Meanwhile, shred the carrot using a julienne peeler or coarsely grate with a box grater. Cut the onion into thin wedges.
Step 2 — Cook omelette
Crack 2 eggs, if using, into a bowl. Season with salt and pepper and whisk to combine. Heat 1 tsp vegetable oil in a medium deep frypan over medium-high heat. Add the egg mixture and swirl to coat the base of the pan. Cook for 2 mins or until just set, then loosely roll up the omelette in the pan. Remove from the pan.
Step 3 — Stir-fry beef
Meanwhile, separate the beef stir-fry. Heat 2 tsp vegetable oil in the same pan over high heat until very hot. Stir-fry the beef for 1-2 mins until browned. Remove from the pan and season with salt and pepper. Heat 1 tsp vegetable oil in the pan over medium heat. Cook the onion, stirring, for 3 mins or until softened.
Step 4 — Stir-fry rice
Add the Balinese seasoning, 1 tbs soy sauce and 1 tsp sugar to the onion and cook, stirring, for 30 secs or until fragrant. Add the beef, carrot and rice and peas and cook, stirring, for 1 min or until combined. Taste, then season with salt and pepper. Remove the pan from the heat.
Step 5 — Serve up
Cut the omelette into strips. Divide the fried rice among bowls, top with the omelette and enjoy!
