Bring a medium saucepan of water to the boil for the noodles. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Thinly slice 1 garlic clove.
Step 2 — Start stir-fry
Heat 1 tbs vegetable oil in a medium deep frypan over medium-high heat. Stir-fry the carrot and garlic for 3 mins or until the carrot is softened. Increase the heat to high, add the beef mince, season with salt and pepper and stir-fry for 5-6 mins until browned and crispy.
Step 3 — Add sauce
Add the char siu sauce and 125ml (½ cup) boiling water to the mince mixture and bring to the boil. Reduce the heat to medium and cook, stirring occasionally, for 3 mins or until slightly reduced.
Step 4 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 5 — Serve up
Add the noodles, spinach and 1 tsp soy sauce to the beef stir-fry and toss until combined and warmed through. Remove the pan from the heat. Taste, then season with salt and pepper. Divide the beef noodle stir-fry among bowls, scatter over the sesame seeds and enjoy!
Step 6 — Make it spicy
If you like a kick of heat, scatter over a pinch of chilli flakes or thinly sliced fresh chilli just before serving.
