Bring a medium saucepan of water to the boil for the noodles. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Thinly slice 1 garlic clove.
Step 2 — Start stir-fry
Heat 1 tbs vegetable oil in a medium deep frypan over medium-high heat. Stir-fry the carrot and garlic for 3 mins or until the carrot is softened. Add the plant-based mince, season with salt and pepper and stir-fry for 5-6 mins until browned and crispy.
Step 3 — Add sauce
Add the char siu sauce and 125ml (½ cup) boiling water to the mince mixture and bring to the boil. Reduce the heat to medium and cook, stirring occasionally, for 3 mins or until slightly reduced.
Step 4 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking.
Step 5 — Serve up
Add the noodles, spinach and 1 tsp soy sauce to the mince mixture and toss until combined and warmed through. Remove the pan from the heat. Taste, then season with salt and pepper. Divide the noodle stir-fry among bowls, scatter over the sesame seeds and enjoy!
Step 6 — Make it spicy
If you like a kick of heat, scatter over a pinch of chilli flakes or thinly sliced fresh chilli just before serving.
