Preheat the oven to 200C, fan-forced. Line 2 oven trays with baking paper. Cut the unpeeled potatoes into 1cm-thick chips. Combine the barbecue seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the potato and toss to coat. Put the potato on the lined tray and bake on the upper oven shelf for 25 mins or until golden and tender.
Step 2 — Prep ingredients
Meanwhile, thinly slice the tomato and cheese. Halve the buns through the middle. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Whisk 1 egg in a shallow bowl. Combine 1 tbs plain flour and a pinch of salt in a separate shallow bowl. Put the breadcrumbs in a third bowl.
Step 3 — Cook schnitzels
Dust the chicken with flour, shake off the excess, then dip in the egg and coat in the breadcrumbs. Heat 2 tbs olive oil in a medium frypan pan over medium heat. Cook the schnitzels for 2-3 mins each side until golden and cooked through. Remove from the pan and drain on paper towel. Season with salt and pepper.
Step 4 — Toast buns
Put the buns on the remaining lined tray, cut-side up, and bake on the lower shelf for 4 mins or until lightly toasted. Halve the schnitzels on an angle. After 2 mins, put the schnitzels on the tray with the buns and top with the cheese. Bake for 1-2 mins until the cheese is starting to melt.
Step 5 — Toss slaw and serve up
Put the ranch dressing and slaw mix in a bowl and toss to combine. Layer the bun bases with the schnitzels, burger sauce, tomato, 1 tbs tomato sauce, if using (see Make it yours), and some of the slaw, then sandwich with the tops. Serve the chicken burgers with the chips and remaining slaw. Enjoy!
Step 6 — Make it yours
Use your favourite sauce in your burger. Barbecue sauce, sriracha and dijonnaise would also work well.
