Trim the stems from the snow peas, removing the strings from one side. Trim the lettuce, then cut into wedges.
Step 2 — Finish prep
Thinly slice the cucumber, radish and spring onion.
Step 3 — Make dressing
Combine the aioli, sesame seeds, ¼ tsp sesame oil, 1 tsp water and ½ tsp soy sauce in a bowl.
Step 4 — Brown dumplings
Heat the remaining sesame oil and 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Cook the dumplings, without turning, for 2-3 mins until golden on one side.
Step 5 — Steam dumplings
Carefully add the snow peas and 60ml (¼ cup) water to the dumplings (take extra care adding water to the hot pan as the oil can spit and the steam created is very hot). Cover and steam for 3 mins or until the dumplings are tender. Add ½ tsp soy sauce and gently toss to combine.
Step 6 — Toss salad and serve
Put the lettuce, cucumber, radish, most of the spring onion and 1 tsp white wine vinegar in a bowl and gently toss to combine. Divide the salad and dumplings and snow peas among bowls. Drizzle with the dressing and scatter with the fried shallots and remaining spring onion to serve.
