Check your avocado is ripe before starting this recipe (see Kitchen hack). Preheat the oven to 200C, fan-forced. Line an oven tray with baking paper. Bring a medium saucepan of water to the boil for the noodles. Thinly slice the spring onion. Halve the cucumber lengthwise, then thinly slice on an angle.
Step 2 — Glaze and roast beef
To make the glaze, combine 2 tsp vegetable oil, 2 tsp soy sauce and 2 tsp honey in a large bowl and season with salt and pepper. Pat the beef dry using paper towel. Transfer to the lined tray and brush with half the glaze. Roast the beef for 20 mins for medium-rare, or until cooked to your liking. Remove from the oven and reserve the tray juices. Rest the beef for 10 mins.
Step 3 — Cook noodles
Meanwhile, cook the noodles in the pan of boiling water for 3 mins or until tender. Drain, then rinse under cold water to cool. Combine the Japanese dressing, 2 tsp soy sauce and 1 tsp honey in a large bowl and season with salt and pepper. Add the noodles, spring onion and cucumber and toss to combine.
Step 4 — Reduce glaze
While the beef is resting, put the remaining glaze and reserved tray juices in a small frypan over medium-high heat and bring to the boil. Cook, stirring constantly, for 3-4 mins until reduced and thickened. Remove the pan from the heat.
Step 5 — Serve up
Cut the avocado into 1cm chunks and toss through the salad. Slice the beef. Divide the noodle salad and beef among bowls. Pour over the reduced glaze, scatter with the sesame seeds and enjoy!
Step 6 — Kitchen hack
To speed up the ripening process, put the avocado in a paper bag and close loosely, then leave on the kitchen bench for a day or two. Add a banana to the bag to make the avocado ripen faster.
