Preheat the oven to 200C, fan-forced. Cut the tops off the rolls. Tear the soft bread in large chunks from inside the bases, leaving 2 thick shells. Put the vegetable curry in a microwave-safe bowl. Heat in the microwave for 3 mins, then stir. Heat for a further 2-3 mins until hot.
Step 2 — Bake bread
Meanwhile, put the roll tops, shells and bread chunks on an oven tray and bake for 5 mins or until lightly toasted.
Step 3 — Prep ingredients
While the bread is baking, pick the coriander sprigs, discarding the tough stems. Combine the mango chutney and 2 tsp water in a large bowl. Add the ranch salad and toss to coat.
Step 4 — Serve up
Using a slotted spoon, fill the shells with the vegetable curry, then divide among plates. Scatter with the coriander and fried shallots and serve with the bread tops, bread chunks and salad. Divide the remaining curry sauce among bowls (use the crunchy roll tops and bread chunks to dunk into the curry). Enjoy!
