Ingredients

  • 1pcs carrot
  • 1pcs Lebanese cucumber
  • 180g haloumi
  • 5g Moroccan seasoning
  • 50g mixed salad leaves
  • 2pcs milk buns
  • 50g aioli mayonnaise
  • 10ml olive oil
  • 15ml extra virgin olive oil
  • 15ml red wine vinegar

Method

  1. Step 1 — Prep vegetables
    Shred the carrot using a julienne peeler or coarsely grate with a box grater. Thinly slice the cucumber.
  2. Step 2 — Prep haloumi
    HALOUMI OPTION Slice the haloumi.
  3. Step 3 — Season haloumi
    Combine the Moroccan seasoning and 2 tsp olive oil in a bowl and season with pepper. Add the haloumi and toss to coat.
  4. Step 4 — Cook haloumi
    Preheat the grill to medium. Heat a medium frypan over medium-high heat. Cook the haloumi for 2 mins each side or until golden. Remove from the pan.
  5. Step 5 — Make salad
    Meanwhile, put 1 tbs extra virgin olive oil and 1 tbs red wine vinegar in a large bowl, season with salt and pepper and whisk to combine. Add the carrot, cucumber and salad leaves and toss to coat.
  6. Step 6 — Get ready to serve
    Halve the buns through the middle. Put on an oven tray, cut-side up, and grill for 2-3 mins until lightly toasted. Spread the bun bases with the aioli. Divide the haloumi and half the salad among the bases, then sandwich with the bun tops. Serve with the remaining salad.
