Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled sweet potatoes into 2cm-thick chips. Put the sweet potato on the lined tray, drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Bake for 20-25 mins until tender.
Step 2 — Marinate fish
Meanwhile, combine the South American seasoning and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the fish and turn to coat. Bring a small saucepan of water to the boil for the peas.
Step 3 — Bake fish
Once the sweet potato has baked for 20-25 mins, push the sweet potato to the edges of the tray. Add the marinated fish to the tray and bake for a further 10 mins or until the fish is cooked through (see Kitchen 101) and the sweet potato chips are golden and crisp.
Step 4 — Cook peas
Add the peas to the pan of boiling water and cook for 2 mins or until tender. Drain.
Step 5 — Serve up
Cut the lemon into wedges. Divide the baked fish, sweet potato chips and peas among plates. Serve with the ranch dressing and lemon wedges. Enjoy!

Not sure if your fish is cooked through? Simply use a fork or the tip of a knife to take a peek inside the thickest part of the flesh; if it comes apart easily, the fish is cooked.
