Ingredients

  • 150g jasmine rice
  • 150g peas
  • 1pcs carrot
  • 2clov garlic
  • 300g corn kernels
  • 1pcs diced bacon
  • 50g oyster sauce
  • 5ml olive oil
  • 10ml soy sauce
  • 5ml honey

Method

  1. Step 1 — Cook rice and peas
Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 10 mins, then add the peas and cook for a further 2 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
  2. Step 2 — Prep ingredients
Meanwhile, finely chop the carrot. Crush or finely chop 2 garlic cloves. Drain and rinse the corn.
  3. Step 3 — Fry carrot and bacon
Heat 1 tsp olive oil in a medium deep frypan over medium-high heat. Cook the carrot, stirring, for 2 mins, then add the bacon and garlic and cook, stirring, for 4-5 mins until the bacon is browned and the carrot is tender.
  4. Step 4 — Add rice
Add the rice and peas, corn, oyster sauce, 2 tsp soy sauce and 1 tsp honey to the bacon mixture and cook, stirring, for 1-2 mins until warmed through. Remove the pan from the heat. Taste, then season with pepper.
  5. Step 5 — Serve up
Divide the fried rice among bowls and enjoy!
  6. Step 6 — Did you know?
Adding carrot to the fried rice is an easy way to boost nutrition for kids and adults alike. Not only do carrots add a delicious sweetness, but they contain beta-carotene, a superhero antioxidant.
