Ingredients

  • 1pcs carrot
  • 50g smoked cheddar
  • 225g pineapple pieces
  • 1pcs diced bacon
  • 4pcs pita breads
  • 50g baby spinach leaves
  • 50g tomato paste
  • 15ml olive oil
  • 5ml white wine vinegar

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Peel the carrot into ribbons with a vegetable peeler. Coarsely grate the cheese. Drain the pineapple pieces.
  2. Step 2 — Cook bacon
    Heat 1 tsp olive oil in a medium frypan over medium-high heat. Cook the bacon, stirring, for 4 mins or until almost crisp. Remove from the pan and drain on paper towel.
  3. Step 3 — Bake calzones
    Put 2 pita* on the lined tray (see Kitchen hack). Spread with the tomato paste. Top one side of each pita with the cheese, pineapple, bacon and half the spinach, then season with salt and pepper. Fold the pita over to enclose the filling, then brush with 2 tsp olive oil. Bake for 8-10 mins until golden and crisp.
  4. Step 4 — Make salad
    Meanwhile, combine 1 tsp olive oil and 1 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the carrot and remaining spinach and toss to combine.
  5. Step 5 — Serve up
    Divide the calzones and salad among plates and enjoy!
  6. Step 6 — Kitchen hack
    Your pita breads may be a little stiff and hard to fold, especially if they have been in the fridge for a while. If so, warm them in the microwave for 30 secs to make them more pliable.
