Ingredients

  • 1pcs capsicum
  • 1pcs red onion
  • 2pcs small sweet potato
  • 300g free-range chicken wings
  • 10g smoky barbecue seasoning
  • 1pcs lime
  • 15ml olive oil
  • 20g butter
  • 3ml red wine vinegar
  • 1pinch pinch of sugar
  • 30ml mayonnaise

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced (see Kitchen 101). Line 2 oven trays with baking paper. Thinly slice the capsicum and onion. Cut the unpeeled sweet potatoes into wedges and put on a lined tray. Drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Roast on the lower oven shelf for 20 mins.
  2. Step 2 — Start wings and glaze
    Put the chicken wings on the remaining lined tray and season with salt and pepper. Roast on the upper shelf for 20 mins or until golden. Meanwhile, melt 20g butter in a small saucepan over low heat. Stir in half the barbecue seasoning, ½ tsp red wine vinegar and a pinch of sugar. Remove the pan from the heat.
  3. Step 3 — Finish wings and veggies
    Put the chicken wings and barbecue glaze in a bowl and toss to coat. Return to the tray and roast for a further 10 mins or until caramelised and cooked through. Put the capsicum, onion, remaining barbecue seasoning and 1 tsp olive oil in a bowl and toss to coat. Add to the tray with the wedges and roast for 10 mins or until the veggies are tender.
  4. Step 4 — Make lime mayo
    While the chicken and veggies are cooking, juice half the lime, then cut the remaining half into wedges. Put 2 tsp lime juice and 2 tbs mayonnaise in a bowl, season with salt and pepper and stir until combined.
  5. Step 5 — Serve up
    Divide the chicken wings, sweet potato wedges and roast veggies among plates. Drizzle over the lime mayo, serve with the lime wedges and enjoy!

    Adjust your oven shelves before preheating the oven. You'll need to position a shelf in the upper part of the oven for the chicken wings and one at the bottom for the sweet potato.
