Preheat the oven to 220C, fan-forced. Line an oven tray with baking paper. Cut the unpeeled potatoes into 2cm chunks. Thinly slice the spring onion, keeping the white and green parts separate.
Step 2 — Roast chicken wings
Put the chicken wings on the lined tray, drizzle with 1 tbs olive oil, season with salt and pepper and toss to coat. Roast for 15 mins or until lightly browned. Drizzle the chicken wings with the barbecue sauce and toss to coat. Roast for a further 10 mins or until cooked through and slightly caramelised.
Step 3 — Cook potato
Meanwhile, put the potato in a medium saucepan of cold salted water and bring to the boil. Reduce the heat to medium and cook for 7-9 mins until tender. Drain.
Step 4 — Make salad
Combine 2 tsp olive oil and 1 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the salad leaves and sunflower seeds (see Make it yours) and toss to combine.
Step 5 — Serve up
Combine 2 tbs mayonnaise and 1 tsp water in a large bowl and season with salt and pepper. Add the potato and white part of the spring onion and gently toss to coat. Divide the chicken wings, potato salad and salad among plates. Scatter over the remaining spring onion and enjoy!
