Thinly slice the onion. Thinly slice the cabbage with a sharp knife or mandoline. Shred the carrot using a julienne peeler or coarsely grate with a box grater. Halve the haloumi horizontally. Combine half the barbecue seasoning* and 2 tsp olive oil in a large bowl and season with salt and pepper. Add the haloumi and turn to coat.
Step 2 — Fry onion
Put 1 tbs flour in a bowl, season with salt and pepper and stir to combine. Dust the onion in the seasoned flour. Heat 1½ tbs olive oil in a medium frypan over medium-high heat. Cook the onion, stirring occasionally, for 6-7 mins until crisp and golden. Remove from the pan.
Step 3 — Pan-fry haloumi
Preheat the grill to high. Return the pan to medium-high heat. Cook the haloumi for 2 mins each side or until golden. Remove from the pan.
Step 4 — Toast buns
Meanwhile, cut the buns in half. Put on an oven tray, cut-side up, and grill for 1-2 mins until lightly toasted. Combine 2 tbs mayonnaise, 2 tsp white vinegar and 1 tsp dijon mustard in a large bowl and season with salt and pepper. Add the cabbage and carrot and toss to coat.
Step 5 — Serve up
Layer the bun bases with some slaw, the haloumi and onion, then sandwich with the tops. Divide the burgers among plates, serve with the remaining slaw and enjoy!
