Bring a medium saucepan of salted water to the boil for the spaghetti. Crush or finely chop 1 garlic clove. Coarsely grate the zucchini and carrot (see Veggie boost).
Step 2 — Cook spaghetti
Cook three-quarters of the spaghetti* in the pan of boiling water for 12 mins or until al dente. Reserve 80ml (⅓ cup) cooking water, then drain the spaghetti. Return to the pan and cover to keep warm.
Step 3 — Start sauce
Meanwhile, heat 2 tsp olive oil in a medium deep frypan over high heat. Cook the zucchini, carrot and garlic, stirring, for 2-3 mins until softened. Add the beef mince and cook, breaking up the lumps with a spoon, for 3-4 mins until browned.
Step 4 — Simmer sauce
Add the tomatoes, Italian seasoning, reserved cooking water, half the tomato paste* and 1 tsp sugar to the beef mixture and stir to combine. Bring to the boil, then reduce the heat to medium and cook, stirring occasionally, for 10-12 mins until slightly thickened. Remove the pan from the heat. Taste, then season with salt and pepper.
Step 5 — Serve up
Divide the spaghetti among plates and top with the bolognese sauce. Enjoy!
Step 6 — Veggie boost
While grating veggies and 'hiding' them in the sauce is a great way to boost nutrients, we also want our kids to learn about food.
