Peel the carrot into ribbons with a vegetable peeler. Thinly slice the spring onion.
Step 2 — Cook chicken
Heat a drizzle of olive oil in a medium frypan over medium-high heat. Cook the chicken for 3-4 mins each side until browned and cooked through. Scatter over half the barbecue seasoning and cook, turning, until coated. Remove the chicken from the pan.
Step 3 — Make smoky mayo
Combine the remaining barbecue seasoning, 2 tbs mayonnaise and 1 tsp water in a bowl.
Step 4 — Warm tortillas
Put the tortillas on a plate, slightly overlapping, and microwave for 30 secs or until warmed through (see Make it yours).
Step 5 — Serve up
Divide the tortillas among plates and top with the chicken and carrot. Drizzle with the smoky mayo, scatter over the spring onion and enjoy!

If you don't have a microwave, heat a large frypan over medium-high heat. Warm the tortillas, in batches, for 30 secs each side or until warmed through.
