Put the cream in the fridge for a few hours to chill. Preheat the oven to 180C, fan-forced. Peel and core the apples, then cut into thin wedges. Put the apple, 1 tsp ground ginger and 2 tsp sugar in a large microwave-safe bowl. Cover and microwave, stirring halfway, for 3 mins or until tender. Transfer the apple to a 1L (4 cup) baking dish. Reserve the bowl.
Step 2 — Bake crumble
Chop 100g butter, put in the reserved bowl and microwave in 30-sec bursts until melted. Add the vanilla cake mix, almonds and remaining ground ginger and rub between your fingertips until well combined. Scatter the topping over the apple. Bake for 35 mins or until golden and bubbling. Beat half the cream in a bowl with electric beaters until softly whipped. Chill until needed.
Step 3 — Prep ingredients
Meanwhile, bring a medium saucepan of salted water to the boil for the pasta and broccoli. Finely chop the broccoli stem, then cut the head into small florets. Finely chop the onion. Crush or finely chop the garlic. Coarsely chop the parsley, discarding the stems. Finely grate the zest of half the lemon*, then juice the half. Finely grate the parmesan.
Step 4 — Cook pasta and broccoli
Add three-quarters of the spaghetti* to the pan of boiling water (if you use all the spaghetti, the dish won't be as saucy). Cook, stirring occasionally, for 8 mins. Add the broccoli and cook for a further 4 mins or until the spaghetti is al dente. Reserve 60ml (¼ cup) cooking water, then drain the spaghetti and broccoli. While the pasta is cooking, start the sauce.
Step 5 — Start sauce
Heat 2 tsp olive oil in a medium deep frypan over high heat. Cook the prawns, stirring, for 2-3 mins until just cooked through. Remove from pan. Heat 2 tsp olive oil in the pan over medium heat. Cook the onion and garlic, stirring, for 3-4 mins until softened. Add the Tuscan seasoning, tomatoes, reserved cooking water and ½ tsp chilli flakes*. Bring to the boil.
Step 6 — Finish sauce and serve
Reduce the heat to medium. Simmer the sauce for 5 mins, then stir in the prawns, parsley, lemon zest and juice, remaining cream and half the parmesan. Toss in the spaghetti and broccoli. Taste, then season with salt and pepper. Serve the pasta scattered with the remaining parmesan, and the apple crumble with the whipped cream.
