Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Cut the unpeeled sweet potatoes into 1.5cm-thick wedges, then put on a lined tray. Drizzle with 2 tsp olive oil, season with salt and pepper and toss to coat. Roast on the upper oven shelf for 5 mins. Add 2 unpeeled garlic cloves to the tray and roast for a further 20 mins or until sweet potato is tender.
Step 2 — Prep ingredients
Meanwhile, halve the cucumber lengthwise, scrape out the seeds using a teaspoon, then thinly slice on an angle. Very finely chop the macadamias. Finely chop the parsley leaves, discarding the stems. Combine the macadamias, parsley and 2 tsp olive oil in a bowl and season with salt and pepper.
Step 3 — Roast fish
Pat the fish dry with paper towel. Put the fish, skin-side down, on the remaining lined tray. Spoon the macadamia mixture over the fish, pressing with the back of the spoon to help it stick. Roast the fish on the lower shelf for 6-8 mins until cooked through or cooked to your liking (see Kitchen 101).
Step 4 — Make salad
While the fish is roasting, combine 2 tsp olive oil and 1 tsp white wine vinegar in a large bowl and season with salt and pepper. Add the cucumber and salad leaves and toss to combine.
Step 5 — Make aioli and serve up
Squeeze the roasted garlic from the skins into a bowl, then mash with a fork. Add 2 tbs mayonnaise and 1 tsp water, season with salt and pepper and stir to combine. Divide the fish, sweet potato wedges and salad among plates. Serve with the garlic aioli and enjoy!
Step 6 — Kitchen 101
Not sure if your fish is cooked through? Simply use a fork or the tip of a knife to take a peek inside the thickest part of the flesh; if it comes apart easily, the fish is cooked.
