Ingredients

  • 2pcs small sweet potato
  • 1pcs pear
  • 2clov garlic
  • 4pcs pork and fennel sausages
  • 400g cannellini beans
  • 25g maple syrup
  • 5g Italian seasoning
  • 130g natural yoghurt
  • 1bunch parsley
  • 15ml wholegrain mustard
  • 15ml olive oil

Method

  1. Step 1 — Prep ingredients
    Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Cut the unpeeled sweet potatoes and unpeeled pear into 2cm-thick wedges, removing the pear core. Crush or finely chop the garlic. Halve the sausages lengthwise. Drain and rinse the beans.
  2. Step 2 — Make marinade
    Combine the maple syrup, Italian seasoning, garlic, 1 tbs wholegrain mustard and 1 tbs olive oil in a large bowl. Lightly season with salt and pepper.
  3. Step 3 — Flavour sausage mixture
    Add the sweet potato, sausage, beans and pear to the marinade and toss to coat.
  4. Step 4 — Bake sausage mixture
    Spread the sausage mixture over the lined tray. Bake for 30 mins or until the sweet potato is tender and the sausage is cooked through.
  5. Step 5 — Prep toppings
    Meanwhile, season the yoghurt with salt and pepper. Pick the parsley leaves, discarding the stems.
  6. Step 6 — Get ready to serve
    Drizzle the yoghurt over the tray bake, then scatter over the parsley leaves. Serve the tray bake at the table.
