Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Thinly slice the onion. Trim the stems from the sugar snap peas, removing the strings from one side. Pick the mint leaves, discarding the stems. Reserve half the leaves, then finely chop the remainder.
Step 2 — Roast onion
Put the onion on a lined tray, top with 10g chopped butter and season with salt and pepper. Roast for 15 mins or until golden. Remove from the oven and cover to keep warm. Meanwhile, combine 1 tbs yoghurt and 3 tsp masala seasoning in a large bowl. Season lightly with salt and pepper.
Step 3 — Cook rice
Rinse the rice until the water runs clear (see Kitchen 101). Put the rice and remaining masala seasoning in a small saucepan with 250ml (1 cup) water, cover and bring to the boil. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork. Season with salt and pepper.
Step 4 — Cook lamb
Season the lamb with salt and pepper. Melt 10g butter in a medium frypan over high heat until hot. Cook the lamb, turning regularly, for 4 mins or until browned. Transfer to the yoghurt mixture and turn to coat. Reserve the pan. Put the lamb on the remaining lined tray. Roast for 10-13 mins for medium-rare, or until cooked to your liking. Remove from the oven and rest for 8 mins.
Step 5 — Serve up
Return the reserved pan to medium-high heat. Cook the sugar snap peas, stirring occasionally, for 3 mins or until tender. Season with salt and pepper. Combine the chopped mint and remaining yoghurt in a bowl. Divide the rice, lamb and sugar snap peas among plates. Spoon over the mint yoghurt, top with the onion and scatter with the mint leaves.
