Preheat the oven to 220C, fan-forced. Line 2 oven trays with baking paper. Thinly slice the capsicum. Thinly slice the jalapeno (see Make it yours). Cut the tomato into wedges. Coarsely grate the carrot. Rinse the grater, then coarsely grate the cheese. Thinly slice the chorizo.
Step 2 — Brown chorizo and bacon
Heat 1 tsp olive oil in a medium frypan over medium-high heat. Cook the chorizo and bacon, stirring occasionally, for 4-5 mins until golden. Add half the barbecue seasoning* and cook, stirring, for 10 secs or until combined. Remove the pan from the heat.
Step 3 — Bake pizzas
Put the pizza bases on the lined trays. Spread the bases with the tomato paste, then top with the capsicum and chorizo mixture and pan juices. Scatter over the cheese and jalapeno, if using. Bake the pizzas, swapping the trays halfway, for 12-15 mins until golden.
Step 4 — Bake garlic bread
Meanwhile, put the garlic bread on an oven tray (see Make it yours), butter-side up, and bake for 6 mins or until golden and crunchy. Combine 2 tsp olive oil and 1 tsp balsamic vinegar in a large bowl and season with salt and pepper. Add the salad leaves, tomato and carrot and toss to combine.
Step 5 — Serve up
Thickly slice the garlic bread and cut the pizzas into wedges. Serve with the salad and enjoy!
Step 6 — Make it yours
Jalapeno chillies have a mild heat. If someone in your household prefers no spice, serve the chopped jalapeno at the table instead. ~ If you only have 2 oven trays, you can bake the garlic bread in a shallow baking dish.
