Preheat the oven to 200C, fan-forced. Line 2 oven trays with baking paper. Cut the unpeeled sweet potatoes into 2cm-thick fries. Thinly slice the cabbage with a sharp knife or mandoline. Thinly slice the cucumber.
Step 2 — Roast wings and fries
Put the chicken wings on a lined tray and season with salt and pepper. Roast on the lower oven shelf for 18 mins or until cooked through. Put the sweet potato fries on the remaining lined tray, drizzle with 2 tsp vegetable oil, season with salt and pepper and toss to coat. Roast on the upper shelf for 20-22 mins until tender.
Step 3 — Make hot sauce
Meanwhile, combine the sriracha sauce (see Did you know?), half the barbecue seasoning, 20g butter, ½ tsp sugar and 2 tsp water in a small saucepan over low heat. Cook, stirring, for 2 mins or until the butter is melted. Remove the pan from the heat.
Step 4 — Fry wings
Combine the remaining barbecue seasoning and 2 tbs plain flour in a large bowl. Toss the chicken wings, in batches, in the flour mixture to coat. Heat 2cm vegetable oil in a medium saucepan over medium-high heat until hot. Fry the chicken wings, in batches, for 1-2 mins until browned and crisp. Using tongs, transfer to a plate lined with paper towel.
Step 5 — Serve up
Combine 1 tbs mayonnaise and 1 tsp water in a large bowl and season with salt and pepper. Add the cabbage and cucumber and toss to combine. Divide the chicken wings, slaw and sweet potato fries among plates and serve with the hot sauce. Enjoy!
