Put the quinoa in a sieve, then rinse well and drain (see cooking tip). Crumble 1 stock cube* into a small saucepan, add 250ml (1 cup) boiling water and stir to dissolve. Stir in the quinoa and bring to a simmer. Reduce the heat to low and cook, covered, for 12-15 mins until the stock is absorbed and the quinoa is tender. Turn off the heat and stand, covered, for 5 mins.
Step 2 — Prep ingredients
Meanwhile, crush or finely chop the garlic. Finely chop the capsicum, discarding the seeds. Pick the coriander leaves, then finely chop the stems. Drain and rinse the corn.
Step 3 — Season chicken
Combine 1 tsp Spanish seasoning* and 1 tbs olive oil in a shallow dish and season with salt and pepper. Put the chicken flat on a board, put your hand on top and halve horizontally into fillets. Add the chicken to the seasoned oil and turn to coat.
Step 4 — Cook chicken
Heat a medium frypan over medium-high heat. Cook the chicken, turning regularly, for 4-8 mins until golden and cooked through. Remove from the pan, drizzle with any pan juices and rest for 3 mins.
Step 5 — Cook vegetables
While the chicken is resting, heat 2 tsp olive oil in the same pan over medium-high heat. Add the garlic, capsicum and corn, season with salt and pepper and cook, stirring occasionally, for 3 mins or until tender.
Step 6 — Get ready to serve
Stir the coriander stems and 1 tsp red wine vinegar into the quinoa. Taste, then season with salt and pepper. Slice the chicken. Divide the quinoa, vegetables and chicken among plates and drizzle the chicken with any resting juices. Crumble over the feta and scatter with the coriander leaves to serve.
